Evolving Essex Street

The sight of the poster announcing the arrival of the new Korean fried chicken chain restaurant Bonchon on Essex Street reminded me of how main streets are always in transition: you can trace the history of a town just by examining the evolving nature of its buildings and hardscapes. Essex Street is fronted by structures from the seventeenth, eighteenth, nineteenth and twentieth centuries—residential, commercial and institutional. It has been covered with dirt, cobblestones, tracks, and pavement, widened several times and in several places, and (unfortunately) transformed into a pedestrian “mall” (on which cars–or I should say trucks and trolleys–still drive)–in its central section in the 1970s. I have posted about Essex Street many, many times, so I thought I would feature some seldom-seen images today, and examine the physical evolution of this storied street.

Below: a not-so-faithful street. It’s surprising to me how few houses of worship are located on Essex Street: at present, only one. Reverend Bentley’s Second Congregational “East Church” was on lower Essex, and before it was transformed into Daniel Low and Co., the imposing structure at the corner of Washington and Essex—the site of Salem’s first meeting house–served as the First Church of Salem–now further along (up) Essex Street. Salem’s only Jewish congregation, Temple Shalom of the Congregation Sons of David, established its first synagogue on Essex Street (its second on Lafayette Street is currently being adapted into academic offices and classrooms for Salem State University). The more mystical Swedenborgian Church was briefly located on upper Essex Street, on the present site of the Salem Athenaeum (American Jewish Historical Society, New England Archives; Weston Collection).

So many lost Essex Street houses! Too many to mention here–I’ve focused on them individually and will continue to do so. I don’t think I’ve ever featured the Sanders House at 292 Essex however, a site now occupied by the Salem YMCA. Alexander Graham Bell lived in the house in the 1870s and conducted experiments in its attic that led to the invention of the telephone: why it couldn’t have been preserved just on this basis I do not know. It reminds me of the beautiful Pickman house down the street, also gone. This particular block of Essex was definitely trending commercial in the late nineteenth centuries, however, and Georgian structures were not long for this world. The new YMCA came in, and just across the street a bit later-the Colonial Revival structure (with its new facade) that will soon house Salem’s Bonchon.

What to do in June: then and now

For various projects over the years I have compiled a stack of reprints of agricultural, health, and “better living” manuals and almanacs from the sixteenth and seventeenth centuries which prescribe monthly tasks and helpful hints, including Thomas Tusser’s Hundreth Good Pointes of Husbandrie (1557) and its sequel Five Hundred Pointes of Good Husbandrie, Richard Saunders’ Apollo Anglicanus: The English Apollo (1665 edition), and Nicholas Breton’s Fantastiks: Serving for a Perpetuall Prognostication (1626) just to name a few titles. While we may not welcome a regimen as much as early modern audiences, I’ve got a busy summer ahead of me so must make some lists. The contrast of rural life centuries ago with (sub-) urban life today is striking: my busy life looks pretty leisurely in comparison.

What to do in June, circa 1600:

1) Weed:  in June get thy wedehoke, thy knife and they glove: and wede out such wede, as the corne doth not love. Slack no time thy weding, for darth nor for cheape: thy corne shall reward it, or ever thou reape. (Tusser)

2) Shear the sheep, but not the lambs.

3) Fatten pigs.

4) Ensure that all outbuildings are in good condition to store grains when the rain comes: things thus set in order, in quiet and rest, shall further thy harvest and pleasure thee best. (Tusser)

5) Harvest the first crop of hay: it is now June and the Hay-makers are mustered to make an army for the field. (Breton)

6) Distill roses and “sweet herbs”.

7) Drink the “pleasantest” wine, and white wine in particular, for it purgeth Choler, and noxious humors from the stomack. (Saunders).

8) Eat “Sallets of Lettice prepared with Vinegar” (Saunders)

9) Don’t eat too much, and exercise: all this month glut not the stomack, but arise from the table with an appetite; arise betimes in the morning, and exercise your body with some long walk. (Saunders)

10) Take heed of eating Cheese and Apples this month, and don’t stay too long in the bath, but to wash the feet this month in cold water is commended. (Saunders)

What to do in June, circa 2015:

1) Weed.

2) Trim the claws of my cats, even those of intimidating Mr. Darcy (or take them to the pet groomer).

3) Buy “healthy weight” cat food for my cats, especially Mr. Darcy.

4) Write nice note to new neighbors asking them to paint their old peeling shed, which borders our garden.

5) “Harvest” flowers from lady’s mantle, alexanders, roses, and other June flowers.

6) Put terrible-smelling salmon stuff on roses.

7) Drink the “pleasantest” wine, especially Sauvignon Blancs from New Zealand.

8) Get on the kale bandwagon.

9) Don’t eat too much and exercise.

10) Seek out new goat cheeses–the only kind of cheese I can eat—and try to take more advantage of my clawfoot tub, as well as what Nicholas Breton calls the sweet season [in which] the senses perfume, and the spirits comfort.

Shaking Quaker Pudding

I don’t know if you noticed the photograph of old recipes on the kitchen table in the Ropes Mansion in my last post: no worries, I’ll put it in this one. At the bottom of one piece of paper is the beginning of a recipe for “Shaking Quaker Pudding”–only the beginning, unfortunately, which set me off on a strange quest. As a descendant of a Shaker (I know–Shakers were/are celibate–how can they have descendants? Well, after he had had his family, my great-great-great? grandfather Calver sold everything at auction over in England and departed for New Lebanon, New York in the nineteenth century: we have the auction poster to prove it) I knew immediately that the reference was to the Shakers, who have developed quite a foodie reputation over the past few years, in addition to their long-established renown for furniture, seeds and herbal tonics. I thought it would be easy to find the rest of the recipe but when I first googled “Shaker Pudding” I came up with Jello Shake-a-Pudding! I can’t imagine anything less Shaker-ish, really. Then I found a British pudding called “Shaker Quaker” Pudding, but it did not start out with the “stone raisins”  line of the Ropes recipe. Finally I found the entire Shaking Quaker recipe, in Mrs. J. Chadwick’s Home Cookery: A Collection of Tried Receipts, Both Foreign and Domestic (1853). So here it is:

The digitized version of Mrs. Chadwick’s cookbook cut off the recipe as well, but fortunately I found another source. All this work for a raisin custard bread pudding (the Shaker Quaker puddings seem to omit the bread) which I doubt I will ever make (unless I add lots of rum or bourbon). However, I did discover several recipes that did tempt me, especially “Shaker Lemon Pie”, apparently a favorite of Martha Stewart’s. And the pudding shaker.

A Week of Fascinators

In honor of the new royal princess, whose mother seems to favor fascinators above all other forms of millinery, and the Kentucky Derby, and my friend Trish the fantastic fascinator-maker, here’s a few hats which popped up in Salem over the past week, almost like harbingers of spring: first at a certain celebration at Hamilton Hall and then yesterday at the new Sea Level Oyster Bar at Pickering Wharf, where we watched the Derby (and the Friendship) sipping minty drinks. Moments of graceful living in a pretty busy week.

May Wine

I have a particularly fond childhood memory of dancing around a Maypole wearing festive (alpine? Elizabethan?) dress at the hippie nursery school I attended in Vermont, and consequently I always celebrate May Day. I do not erect a Maypole in my backyard, but I been known to don the occasional flower wreath or sprig in my hair (especially if I don’t have to go anywhere) and I usually make May Wine, the traditional German spring spirit. May Wine (Maiwein) is simply sweet white wine infused with sweet woodruff (galium odoratum, or Waldmeister, “master of the woods”, in German), and there are lots of variations, both from the past and in the present. You can simply take a few sprigs of the herb, tie them together, and drop them in a bottle of Moselle to infuse for the afternoon in the refrigerator if you like, or you can make a May Punch, by adding sparkling water or wine and fruit. Have your own Happy Hour, or invite your neighbors and drink to the retreat of winter and the onset of spring, a universal sentiment but one that seems very apt this particular year!

My “recipe” for May Wine is always evolving. Generally I take one bottle of Moselle and another of sparkling wine (Proseco, Cava, or if you can find it, German Sekt) and pour them into a glass pitcher to which I add the sweet woodruff (you must snip it before it flowers) and a few splashes of Italian sparkling lemon soda. I leave this concoction for most of the day, and then strain it and pour it into glasses filled with a few strawberries or raspberries. My sweet woodruff is definitely not ready for prime time this year (it is barely out of the ground), so I bought several potted plants, for the first time ever: even if my garden is not ready for May Day, I am.

Third Thursdays @ PEM

On the third Thursday of every month, Salem’s thriving and always-in-motion Peabody Essex Museum stays open until 9:00 pm and hosts an interactive party in its vast atrium around a particular theme: in the past there have been Steampunk, La Vie Bohème, and “I’m a Lumberjack” evenings; last night was “Artopia”, focusing on arts in the community and of the everyday. Admission is free for all Salem residents and museum members, and a mere $10 for those who are neither: a great value as much is offered: music, installations, food and drink, activities, presentations, the omnipresent photo booth, and eclectic company. It’s always a mixed crowd in terms of age (one of the things I like best about Salem: continuous age diversity), but last night seemed both particularly family friendly and interactive: not only were people eating, drinking and talking, but (occasionally simultaneously): sketching, painting, knitting, and making meatballs. My friend Adeline Myers has just published her first cookbook, Global Meatballs, and she gave two interactive gallery presentations ably assisted by her friend Andy Varela of Maitland Mountain Farm here in Salem (producer of amazing pickles). These two were quite engaging in their discussion of the production and processing of food in general, and Addie is quite evangelical in her assertions of the global and historical qualities of meatballs in particular; in fact, I’m inspired to dig into some of my Renaissance cookbooks as soon as I finish this post!

British Bakers

I am certainly saddened by the end of Downton Abbey’s season last week, but I am devastated by the conclusion of its lead-in, The Great British Baking Show, to which I became positively addicted. Everything about this show drew me in: the amiable (never snarky) contestants, the chatty hosts, the authoritative judges, and (most of all) the setting: a turreted tent in the midst of a perfect green English field dotted with sheep and bordered by blooming perennials. Under the tent, all is pastel perfection: the set designers seem to have taken their cues from the classic 1903 Book of Cakes by T. Percy Lewis and A.G. Bromley (which was reissued in 1991 as The Victorian Book of Cakes).

Great British Baking Show (Bake-Off in Britain) judges Paul Hollywood and Mary Berry, this past season’s contestants under the tent, and a page from Lewis & Bromley’s Book of Cakes (1903).

I never knew baking was so difficult, requiring so much precision and patience! The weekly technical and “showstopper” challenges make those on Top Chef look like cakewalks. And all for the title of “star baker” and (the ultimate prize) an engraved cake plate. Victoria sponge cakes, Farthing biscuits, Swedish Princess cake, twenty-layer Schichttorte: these British bakers can do it all. I learned a lot (not that I will ever really use this knowledge) and really enjoyed being plunged into this cozy world on a weekly basis. I’ll miss all the people and all the pastry, and most especially all those beautiful Gorenje refrigerators on set, so much so that I might have to buy one for my own kitchen!

From Fast to Feast

Today, a national holiday of Wales based on its association with the Welsh patron Saint David (c. 500-c. 589), affords yet another opportunity to explore one of my favorite themes: the secularization of saints’ days. This is a touchstone in several of my courses and a subject I’ve returned to here again and again: on Halloween, St. Nicholas’s Day, Valentine’s Day, St. Patrick’s Day, and even the feast day of the lesser-known St. Swithun. There’s no question in my mind that one of the most basic tasks, and most popular consequences, of the Reformation was the transformation of the Christian calendar. This transformation was dramatic: Saint David appears to have been one of the most ascetic of saints (a bold claim, perhaps too bold), forswearing beer and meat in favor of water and bread seasoned with a few grains of salt and herbs, yet today his day is celebrated with parades and cupcakes embellished with Welsh dragons and daffodils, and the leeks which became more particularly associated with him over time.

The most revealing illustration of this process occurred during the Elizabethan era, when the Queen–or her advisers and followers and assorted hangers-on–rather deliberately emphasized the coincidence of dates shared by Elizabeth and the Virgin Mary: September 7 (Elizabeth’s birthday and the Eve of the Feast of the Nativity of the Virgin Mary) and March 24 (the day on which Elizabeth died in 1603, and the Eve of the Annunciation of the Virgin Mary). Moreover, the “Queene’s Day”, November 17, the day of which Elizabeth acceded to the throne in 1558, achieved the status of both a national holiday and a religious holiday over her reign. And thus the Virgin Queen and “the cult of Elizabeth” (a phrase first used by Sir Roy Strong) emerged. There’s no agreement that the feast displayed below represents an early celebration of the Queene’s Day, but I like to think that Joris Hoefnagel’s iconic painting Fete at Bermondsey (c. 1569-70)–one of my very favorites– does just that.

Hip (-Hop) Hamilton

It seems to me that from time to time one of our Founding Fathers emerges from the pack, to glow just a little brighter in a blaze of adulation. Certainly John Adams had his time a few years back, singled out by David McCullough’s book and the HBO series; more recently “Sexy Sam Adams” emerged as the hero of the History Channel’s (or as most historians refer to it, the Hitler Channel) Sons of Liberty miniseries, sponsored, of course, by Sam Adams beer. Now it’s all about Alexander Hamilton, the star of a namesake, sold-out musical on off-Broadway. Hamilton, written, directed and starring Tony winner Lin-Manuel Miranda, is based on Hamilton’s rag-to-riches life, as charted by Ron Chernow’s 2004 biography, set to a score that sounds far more lively than that of 1776.

I don’t find the spotlight on Hamilton, or the success of Hamilton, even remotely surprising. After all, I live in Alexander Hamilton world: the first thing I see every morning when I wake up is Hamilton Hall, the c. 1805 assembly hall named after the Federalist hero/martyr, and the sign boldly attesting to that fact. And even if you’re just familiar with the outline of his life you can understand that it would make for a good story: illegitimate Caribbean orphan sent to New York, student, lawyer, lover, soldier, author, first Secretary of the Treasury, victim of a duel. Fill in the details and you’ve got a blockbuster!

Holiday Happenings

Material girl that I am, my Christmas spirit starts to surface with the first parties, at which (I have to admit) I relish the setting and scenery almost as much as the company. While I am always very happy to see all of my friends on festive occasions, I love Christmas decorations, both for their own aesthetic, traditional and seasonal qualities as well as all for all the effort and creativity that goes into their display–and last week was most definitely one of display. I had to get my own house in order for a Christmas tea at the beginning of the week, and at the end came the Christmas Dance at Hamilton Hall, which always kicks my seasonal spirits into high gear. Each year the committee which organizes the Dance chooses a group of patronesses who host dinner parties before the festivities–and these parties are often just as major as the main event; speaking as a former patroness, I would say more so. Hosting 30 or 40 people for dinner while you’re in an evening gown is never easy, and so when we all finally get ushered into the Hall these women deserve the bows and curtseys that we give them! We were fortunate to attend a pre-Dance party at a beautiful c. 1795 gambrel-roofed house on Federal Street, at which our hostess (who had just finished putting up beautiful Waterhouse wallpapers) had enlisted her children to serve us our home-cooked dinner on (50!!!) Friendship dinner plates accompanied by silver and linen. Then off she want to stand in the line of patronesses, leaving us to enjoy her beautiful house until our own departures for the Hall. I don’t have too many pictures of the Dance itself, for two major reasons: 1) I like to dance myself, and 2) I just can’t get the light right–with the only camera small enough to fit into my evening purse. But let me assure you, it was a lovely night.

My Christmas Decorations:  I’m big on bunnies this year, and deer as usual. The tree has a nice shape, but it’s dropping needles like crazy–I hope it makes it to New Year’s.

On Federal Street: this house has the most amazing details and scale. One of my favorite mantel displays any time of year, and great entry and dining room. Besides the mantel, the living room has a lovely chair rail detail.
