Be Merry and Drink Perry

One of the most famous colonial Christmas “incidents” occurred here in Salem on Christmas night, 1679: the so-called (by Stephen Nissenbaum, author of The Battle for Christmas) “Salem Wassail”. In the old English wassailing tradition, but quite contrary to the prevalent Puritan culture of Salem, four young men from Salem Village burst into the remote home of 72-year-old John Rowden and began singing before his hearth in an effort to entice him to offer them some of his (apparently renown) pear wine, or perry. Rowden and his family tried to get the intruders to leave, but they responded that “it was Christmas Day at night and they came to be merry and drink perry, which was not to be had anywhere else but here, and perry they would have before they went.”  The Rowdens were steadfast (after all Christmas revelry was actually illegal in the colony from 1659-1681), but wavered a bit when the young men offered them some money for the wine, “coins” which turned out to be pieces of lead. More pleading, a request for directions to Marblehead  (apparently not as dry as Salem), and then the young men stoned the Rowden homestead in demand of perry. Desperate times call for desperate measures, and as we all know, the holidays can promote rather disorderly behavior. The seventeenth-century “war on Christmas”, provoked by Puritans who saw no scriptural basis for the holiday and associated it with paganism (they were right) and popery, was largely over in Old England at the time of the “Salem Wassail” and it would soon end in New England as well.

Here and now, I have stocked up for my Christmas visitors with perry ( a traditional local version from Russell Orchards in Ipswich and a more festive sparkling variety–see below) as well as other spirits: I don’t want to get stoned.

Verjuice

From sweet to sour, or tart.  Over the Thanksgiving holiday, I had the most delicious pork scallopini at an Italian restaurant in Rhinebeck, New York. It had an interesting acidic flavor in its sauce–my stepmother identified it as vinegar, but after looking through a bunch of recipes, I’m pretty sure it was verjuice, a close relation with a long history. Verjuice (or verjus) just means “green juice”, and generally it refers to the juice of strained unripe apples or grapes, hence the tartness, but I’ve seen references to it in recipes dating way back–and most prominently in the late fourteenth-century household guide Le Ménagier de Paris and the Tudor cookbooks of Thomas Dawson. I always thought verjuice/verjus was just another name for vinegar (an incredibly important substance in the medieval and early modern eras–essential in both cooking and preservation), but upon closer reading, it’s clear that it is different, as this recipe from Le Ménagier makes clear:  SAUCE FOR RABBIT OR FOR RIVER-BIRD OR FOR WOOD-DOVE. Fry onions in good oil, or mince them and put to cook in the dripping-pan with beef drippings, and do not add verjuice nor vinegar until boiling: and then add half verjuice half wine and a little vinegar, and pass the spices. Then take half wine half verjuice and a little vinegar, and put all in the dripping pan under the rabbit, dove or river-bird; and when they are cooked, boil the sauce, and have some bits of toasted bread and put in with the bird.

Verjuice was (is) neither vinegar nor wine, but perhaps something in between, which is not my original observation. In this foodie world that we live in, it was only a matter of time before verjuice made a comeback, and the Australian chef Maggie Beer started producing it commercially a while ago. Just the other day, I was strolling through a shop in Newburyport, and there it was. So now I can try to make my own perfect scallopini–or maybe a traditional syllabub for our Christmas Day desert.

Thunder Month

In his annual almanac, the seventeenth-century astrologer John Gadbury calls July the Thunder Month, [when] it was customary at Malmsbury-Abbey, to ring the great bell call’d St. Adam’s Bell, to drive away the THUNDER AND LIGHTNING. If the last week of June is any indication of things to come, his characterization will prove correct for July 2013. We’ve had rain pretty much every day over the past week, and it is raining again today. A bit of thunder and lightning, but nothing too dramatic…yet.*** It’s quite humid so the feeling is more tropical than New England, but the garden is thriving.

Other texts from the sixteenth and seventeenth centuries–astrological, agricultural, and “medical”–predict: if the first of July be rainy weather, ’twill rain more or less for four weeks together, which wouldn’t bother me at all. They also offer the following prescriptions for July:  don’t eat “strong”, substantive or spicy foods, nor any “muddy” fish, green fruits, or beets, drink but a little wine, eat sage and rue on a bit of bread every morning, and take as much “verjuyce” as possible, as it cools and refreshes the body (and the mind). Verjuice is a juice made of crushed and strained sour (unripe, green) grapes or apples mixed with a variety of herbs, and it appears to be experiencing a bit of a comeback at the moment, so maybe my early modern experts were right.

Absinthe Accessories

Since its (re-) legalization a few years ago, I have somehow acquired three bottles of absinthe. I found them while I was cleaning out the liquor cabinet the other day, all largely untapped. I think I tried a few sips, and a few more cocktails, and then put all three bottles on the top shelf and forgot about them. Even though it comes in my favorite color green, is made of one of my favorite herbs (wormwood–which grows vigorously in my garden every summer), and I find its long history fascinating, I cannot seem to acquire a taste for la Fée Verte. Maybe it’s too strong for me, maybe I just haven’t found the right cocktail recipe (please forward if you have one), and maybe I just don’t have the right stuff: my tea strainer is clearly no substitute for an absinthe spoon, and my sherry glass can’t compete with the Pontarlier glass of the proper absinthe set-up. And then there are special fountains, decanters, seltzer bottles, sugar tongs, and saucers:  the Absinthe Ritual was quite a production.

I do like the slotted spoons:  they were made in many different designs and seem to be quite collectible. I’m sure most of them have been serving as pie knives for the last century or so. With the lifting of  the ban on absinthe and the diffusion of steampunk culture (which seems to give absinthe pride of place, right of there with gears and octopuses), new absinthe accessories are also being produced, including all manner of spoons.  The possibilities are endless.

The other type of absinthia (it is a word) that seems to be very collectible are images. Obviously the café paintings produced by nearly every French Belle Epoque artist are out of reach, but there was also a lot of more ephemeral absinthe art produced in the period as well:  posters, photographs, cards. I particularly like the posters produced around 1910, when a fierce debate was being waged over the Green Fairy. Advocates for and against the prohibition of absinthe put out very compelling images, like these posters below. In the first one, published by A.H. Gantner is Switzerland in 1910, a menacing man representing the coalition of religion and medicine (strange to have faith and science on one side!) is literally skewering the green fairy and Swiss freedom at the same time. That was the central pro-Absinthe argument at the time:  temperance is anti-freedom, not just freedom to drink absinthe, but civil liberties in general. Five years after absinthe was banned in Switzerland, France followed suit, and an Audino poster from 1915 presented the Green Fairy as Joan of Arc, burning at the stake while her ghostly Swiss sister looked on. In the last image, an advertisement for a 1913 film titled Absinthe produced by the Gem Motion Picture Company in New York, an absinthe addict stares at the evil substance, mesmerized.

Well I think I’ve gone off on a tangent:  the suppression of absinthe is another subject altogether, really, as is its early history, before the nineteenth century, when it was perceived as medicinally beneficial rather than addictive and destructive (as well as pleasurable).  I’m talking about stuff today. Though I haven’t acquired a taste for absinthe, I do like its smell (and color), especially as contained in my candle from Witch City Wicks.

Wassail and Shrub

I’m making two traditional drinks for the holidays this year:  wassail for a gathering and shrub for gifts. Both drinks go way back, how far no one really knows. Wassail was both a drink and an activity, first referenced in the cider-producing parts of England where harvest revelers would dance about sprinkling the trees with a particularly potent vintage so that the next year’s harvest would be abundant: Robert Herrick wrote Wassaile the trees that they may beare / You many a plum and many a peare/For more or lesse fruits they will bring / As you do give them Wassailing in the seventeenth century. At some point, Wassail and Wassailing also came to refer to a more general custom of a drink/drinking to one’s health (the Middle English waes hael roughly translates to “be hale” or “be well”), and more specifically to Christmas cheer and well-wishing:  wassailing seems to merge with caroling to create a custom of extending celebratory hospitality to one’s friends and neighbors during the holiday season. The great revival (or creation?) of Christmas traditions in the Victorian era brought forth not only trees but also wassailing; the “traditional” Here We Come a-Wassailing carol that we are all so familiar with actually dates from the mid-nineteenth century.

Christmas Spirits

It was a bit difficult to narrow down the variant recipes for the wassail drink; they seem to fall into spiced ale, spiced cider, and spiced wine categories with rum even appearing in a few.  The most traditional recipes feature stewed and mottled apples and/or eggs to create a thick  frothiness that makes the drink resemble “lambswool”, its early designation. I’m not going that route, as I find that texture (and eggs in general) rather repellant. I think I’m going to go for a simple wine and fruit juice recipe from the Williamsburg Cookbook.  And sadly, I do not have one of those multi-handled wassail bowls like the one from the V & A above; a simple punchbowl will have to do.

Shrub is probably even more ancient than wassail drinks; it derives from the necessity of preserving fruit long after the harvest over. Fruit is combined first with sugar and then with vinegar to create a syrup that can last indefinitely and mix with anything.  My hunch is that shrub was one of those things discovered (or rediscovered) by Europeans as a result of their encounters during and after the Crusades, as its name derives from the Arabic sharab (syrup; drink) and sugar was introduced into the European diet (and consciousness!) at that time too. Refrigeration did away with shrub, but I think it is currently experiencing a revival: there are several commercial manufacturers, including Tait Farm, from which I bought my first bottle.  But it’s easy enough to make, and there are 2 major processes:  hot and cold.  Using heat, you macerate whatever fruit you prefer (berries are best), add sugar and a bit of water, and boil up a syrup.  Once it has cooled, you add vinegar–whatever kind you like (I generally use apple cider or some type of flavored vinegar rather than white).  Leave it for a while, then strain, and then you have a fermented concoction which you can add to seltzer, lemonade, or alcohol (gin,vodka, and rum all work well with shrub). Without heat, the fruit and sugar combine to create a syrup-like mixture anyway, which you then add to the cider. Shrub is both tart and sweet, and you can keep it in the refrigerator for quite a while. A very pleasant way to drink your vinegar!

Whistle Belly Vengeance

Flipping through one of a stack of old books I seem to be collecting on “ye olde” customs of New England, I found not only a recipe for a popular drink called “Flip”, but also one very much linked to my adopted city:  “A terrible drink is said to have been made popular in Salem – a drink with a terrible name – whistle-belly-vengeance. It consisted of sour household beer simmered in a kettle, sweetened with molasses, filled with brown-bread crumbs and drunk piping hot” (Alice Morse Earle, Customs and Fashions of Old New England, 1893).  I had seen that phrase before–in Old England–where it generally seemed to convey a truly awful drink, so it is odd to see it used as a name of a popular one:  the link must be the sour (spoiled) beer.  Our colonial forebears lived in an ever-perishable world which disdained waste of all kinds, so spoiled beer was turned into something sweet and hot to cover up its taste, and I suppose that the bread crumbs even added a bit of sustenance.  Many of the drinks referenced by Earle are similar in their combination of sweet and hot–and a few have proteins mixed in as well;  sillabub (hard cider, mixed with sugar, nutmeg and cream)and the afore-mentioned flip (strong beer, mixed with sugar, nutmeg, pumpkin and molasses, a shot of rum and a beaten egg, stirred with a hot fire poker) seem to have been the most substantive.  In general, possets were drinks which featured cream or milk, and fustians contained eggs.

Beverige was a lighter, non-alcoholic drink generally made of water mixed with ginger and molasses, but when served to sailors it was strengthened by the addition of rum and vinegar, and became switchel. There were countless rum drinks, served hot and cold:  beer was mixed with rum (bogus), cider was mixed with rum (stone-wall), molasses was mixed with rum (black-strap).  New England was indeed awash in rum, perhaps fueled by rum, and therein, unfortunately, lies its major connection to slavery. My own house was built by a wealthy rum distiller, so I think about this connection quite a bit.

Apparently a British brewery has revived Whistle Belly Vengeance:  a “ malty reddish ale”  produced by Summerskills Brewery of Devon is clearly not based on the original recipe, but it does seem to have attained the “frothiness” that was often aspired to way back when.
